Sometimes I want to remember the taste of childhood and try a salad, which is present at all celebrations - Olivier. I want to please you, there are a lot of interpretations of this salad, but today I will tell you how to prepare raw olive .
We will need:
- 1 medium turnip (or 1 small vegetable marrow);
- 1 fresh cucumber;
- 1/3 red onions (any bow, even green);
- 1 small carrot;
- a pair of fennel branches;
- green peas (can be frozen);
- 1 avocado;
- ground black pepper.
I did without peas, because since my childhood I do not like it, and without salt, because I do not use it, but you can add it. Salt in Olivier perfectly replaces onion, black pepper and raw soy mayonnaise.
- 100 gr. peeled, non-fried sunflower seeds;
- juice 1/3 of a lemon;
- 1 tablespoon mustard oil.
First, prepare the mayonnaise so that it sticks a little while we cut the vegetables. For this, seeds need to be soaked for 5 hours so that they swell and all the dirt has left them. Next, the seeds need to be washed and put in a blender, squeeze 1/3 of the lemon and add 1 tablespoon mustard oil. All blend in a blender until smooth, white mass. If you want more, add more lemon juice. In this mayonnaise you can add garlic or different seasonings, then you will get different sauces.
Now chop all the vegetables. Since we will not cook anything, the vegetables will be hard and therefore the smaller you cut them, the more pleasant the texture will be. Onions need to be cut smaller than vegetables, so that it spreads equally and gives juice. At the very end we cut the dill and sprinkle the salad.
Now we pour everything on top with raw-water mayonnaise, mix, pepper, salt and mix again. Raw olive is ready!
To taste very much like Olivier, only much more useful. To let the salad become softer and tastier, let it brew in the refrigerator for a couple of hours.
Naturally, you will not get one-on-one taste, because raw foods have a different taste, and mayonnaise is natural, without eggs, milk and generally on seeds :)
Such an olive can be laid out with a round shape, decorated with a sprig of dill and sprinkled with sesame. Get a restaurant feed.
